
Emanuele Scarello is chef patron and the fifth generation of his family to run Ristorante Agli Amici in Udine, in the northern Italian region of Friuli Venezia Giulia.
From a young age Scarello grew up around the business of fine food and wine and quickly inherited a passion for his family’s regional cuisine.
Taking his innate knowledge of the produce and flavours of his home region, Scarello pushes the boundaries of Friuli Venezia Giulia’s traditional dishes by experimenting with new techniques to elevate the tastes and aromas of each ingredient.
He stamps his cuisine with a signature modern expression of generations of family dishes. Yet he never loses the passion that inspired this style – the traditions and culture of the region of Friuli Venezia Giulia.
Emanuele Scarello also works closely and gives lectures at the ‘Italian Cuisine Vocational training Centre ALMA’.
