GIOVANNI SANTINI

Giovanni Santini was born in 1976 in Asola, Mantova, in Italy’s Lombardy region.

From an early age he was exposed to the rigours of the professional kitchen, at his parents’ restaurant Dal Pescatore in Lombardy. In fact, Santini’s eagerness to learn more about the business saw him working with the Front of House team during the weekend, while he completed his studies at the Scientific Lyceum.

Unsurprisingly he developed a passion for cooking and before he finished school had moved from Front of House into the kitchen. Under the watchful gaze of his Grandmother he learnt technique and craft and soon was responsible for the Pasta section.

A break to continue his studies at university in Piacenza – where he met his now partner, Valentina – did little to dampen Santini’s passion and armed with a growing knowledge of the specifics of food technology, he was back in the kitchen with renewed energy and enthusiasm.

Basing his dishes on the health aspects of each individual ingredient, Santini’s menu is both inspirational and creative yet never forgets the traditions of balancing flavours. Through his menu this passionate chef has dedicated himself to a cuisine that is nutritional yet inventive – for him, food is the equivalent of health.

The restaurant strikes a beautiful balance between this innovation and tradition.

Dal Pescatore is also one of the S.Pellegrino World’s 50 Best Restaurant list.
