ALVIN LEUNG

Born in London and raised in Toronto, Alvin has traveled extensively since birth, making him well versed in both different cultures and cuisines. His unique brand of “X-treme Chinese” has modernised Chinese cuisine by combining centuries old recipes with modern ingredients and varied cooking techniques. His lighter and more refreshing dishes are more in tune with modern palates and he is adamant on using seasonal market produce sourced from his most trusted suppliers both locally and Internationally.

Having discovered early on that new age diners wanted more than just a meal, they wanted the full experience, he began his journey by dining in challenging and highly regarded restaurants such as El Bulli, The Fat Duck and Joël Robuchon’s restaurants on a regular basis. It was then he decided to take Chinese food in a totally different direction and started experimenting with ideas he’d absorbed from his travels to enhance his culinary approaches and techniques.

A true culinary genius, Alvin is recognised by his peers and customers alike as one of the most creative in Asia, and he is regularly invited overseas to give master classes and demonstrations alongside celebrated chefs, such as Ferran Adrià, Rene Redzepi, Martin Berasategui.

In 2009, Bo Innovation became Hong Kong’s only independent restaurant to be awarded two Michelin stars by the prestigious Michelin guide. Alvin is also one of two self- taught chefs in charge of a professional kitchen that has ever been awarded Michelin stars, with the other being Heston Blumenthal.
