MASSIMO BOTTURA

A key figure among a new generation of Italian chefs, Massimo Bottura draws a fine line between tradition and innovation at his two star Michelin restaurant “Osteria Francescana” in the heart of Modena’s historic center.

Bottura invites surprise by breaking the rules with unexpected combinations of familiar ingredients. This is further enhanced in the setting of his dining room where his guests sit surrounded by contemporary art and minimalist Italian design.

It is perhaps his play on opposites that distinguishes his kitchen. Each dish is the fruit of an idea – he endeavours to make people smile by evoking memories through using traditional ingredients but prepared with contemporary techniques and modern presentation.

Iconic dishes such ‘saba lacquered Black Romanola ribs’, and ‘warm and cold Zuppa Inglese’ summarize Bottura’s respect for Italian traditions juxtaposed against a healthy dose of irreverent youth.

As well as pushing the boundaries of Italian cuisine, Osteria Francescana is dedicated to finding, supporting and promoting local artisan producers and products from Prosciutto to Balsamic Vinegars.

Osteria Francescana entered the 2010 S.Pellegrino World’s 50 Best Restaurant list at No 6.
