Born in Como in 1973, Paolo Lopriore’s earliest inspiration was from his mother’s kitchen - a woman who was a self-taught and passionate home cook who instilled a strong sense for the quality of local seasonal ingredients.
After school, his evident promise and talent secured him a position in the kitchens of Gualtiero Marchesi in Milan. After a brief stagier at Enoteca Pinchiorri in Florence, he rejoined Marchesi for two consecutive years at L’Albereta in Erbusco in Brescia.
Eager to broaden his culinary base, Lopriore left Italy for France and worked at Pavillon Ledoyen in Paris and La Maison Troisgros in Roanne. A further two years were spent in Norway in the restaurants of Oslo, before his eventual return to Italy.
In 2002, Lopriore took over the helm as Head Chef at Il Canto in the beautiful Relais et Chateaux, Certosa di Maggiano in Siena in Tuscany. Currently No 39 in The S.Pellegrino World’s 50 Best Restaurants 2011, the restaurant offers a menu that is boldly non traditional in one of the most fiercely protected culinary regions of Italy.
